Almond Flour – No Sugar Added Cookies

I’m unable to process sugar so I’m always looking for healthy ways to get that sweet fix using natural sweeteners that nature provides.  This recipe does just that very thing using bananas as the sweetener.

The original recipe was for 6 Tbsp. of butter and 1/2 cup of Artificial sweetener like Truvia.  Since I modified it with the banana I quickly realized I didn’t need that much butter as the consistency was much wetter with the use of the banana.

Also you can modify this with just about any flavor.  I’ve added cocoa, coconut, orange zest,
lemon zest, peppermint and even  PB2 (powdered peanuts) for a peanut butter flavor.

2 cups bleached Almond Flour
1 ripe banana
1 tsp. or more of the flavoring of your choice – experiment!
4 tbsp. butter or margarine

I usually stick it in the fridge for about 30 minutes which makes for a better consistency when baking.  Spoon drop or roll into balls and flatten onto a non-greased, parchment paper cookie sheet and bake for 10-12 minutes at 350º until slightly brown.  Then enjoy!
